My husband and I were kid free tonight so we got to have a wild and crazy night of… grocery shopping. We needed to get the food for next week’s meals.
Before we went to the store I sat down and made a mental list of everything I would need. This week’s meals were too much food for me. Plus I wanted to switch things up anyway.
Last week I had chicken for lunch and small portions of steak for dinner. This week I’m only having chicken. (We’ll see how that goes…) For breakfast I’ll have homemade protein bistro boxes like they have at Starbucks, minus the eggs. I just can’t do eggs for some reason. For snacks I’ll have unsalted crackers with Justin’s peanut butter (the only kind I’ll eat.)
I chose to use the crockpot this week for the chicken. I just got a huge package of chicken breasts that I’ll dice up and season with chili powder, smoked paprika, onion powder, black pepper, cumin and a little bit of salt. I’ll just toss it in the crockpot, let it cook on low for eight hours and my work is done!
For the sides I’ll be having raw veggies and museli bread. Muesli bread is so good I could have it for breakfast, lunch and dinner- and I will be. I don’t really have a set recipe for it. I just got on pinterest and typed it in and picked and chose what I liked from each recipe. Once I figure it out I’ll post about it in here. But for now I’m going to get some rest because I have a long day of cooking ahead of me!
